We're in the middle of a bountiful fall harvest, and now is the perfect time to try your hand at canning. Along with the quality taste of homemade preserves, canning can also be healthier alternative to many store-bought foods. Preserved food offers a wide variety of health benefits due to the process of fermentation, which increases nutrients such as Folic Acid, Vitamin B12, and Riboflavin. <div><br><div>To get started, we encourage everyone to take a closer look at the two methods of canning: <a href="https://www.freshpreserving.com/blog?cid=water-bath-canning" rel="nofollow external" class="bo">Water Bath Canning</a> and <a href="https://www.freshpreserving.com/pressure-canning.html" rel="nofollow external" class="bo">Pressure Canning</a>. A time of awareness where we intuited that what was happening 'outside' was also happening 'inside' each of us. A time when nature was our teacher. The following practices invite you to return and rekindle this inner knowing for the sake of your own well-being, for the sake of our planet and for future generations to come who will inhabit it.</div><div><br></div><div><strong>Principles of Mindfulness</strong></div><div><br></div><div><strong>Awareness </strong>- Paying attention to our attention - how and what we notice</div><div><div><strong>Non-judgement </strong>- Our ability to accept experiences as they are without</div><div>evaluation or judgment</div><div><strong>Peacefulness</strong> - Our ability to cultivate a state of peacefulness and equanimity</div><div>amidst changing conditions</div><div><br></div><div>Pay attention to these principles as you go through each exercise, bringing with you a sense of wakefulness, appreciation, and wonder to each experience.</div></div><div><br></div><div><strong>28. Cultivate Seven Generation Time</strong></div><div><strong><br></strong></div><div>This practice is that many Native American tribes have used to convey respect for and protect all life on earth. When we cultivate seven generation time, we take a step outside of ourselves, our needs and wants in the moment, and instead view all of our decisions in light of how they will impact the next seven generations. This practice increases our accountability and responsibility for caring for that which we control in our daily lives.   <Title>UMBC Eats Community Cookbook Recipe of the Week</Title>

    <div class="html-content"><h5>Chili Tortilla Bake</h5><div><br></div><div><div>Ingredients:</div><div>1 lb. ground beef</div></div><div>15 oz. can tomato sauce</div><div>14 1/2 oz. can black beans, drained and rinsed</div><div>8 3/4 oz. can whole kernel corn, undrained</div><div>4 1/2 oz. can chopped green chilies, undrained</div><div>2 tbsp. chili powder</div><div>2 tbsp. minced onion</div><div>1 tsp. ground cumin</div><div>1 tsp. garlic powder</div><div>1/2 tsp. oregano leaves</div><div>6 (8-inch) flour tortillas, divided</div><div>2 cups shredded cheddar cheese, divided</div><div><br></div><div><br></div><div>Preheat oven to 350 and spray the bottom of a 9x13 baking pan with nonstick cooking spray and spread with a little salsa to keep from sticking. In a large skillet, brown ground beed, drain. Add tomato sauce, beans, corn and green chilies. Stir in next 5 seasonings. Bring to a boil and reduce heat. Simmer uncovered for 15 min. In a 2 quart baking dish coated with cooking spray, place 3 flour tortillas to cover bottom, overlapping as needed (I cut my tortillas in half and layer them with the flat edges against the pan). Layer with 1/2 of the chili mixture and 1/2 of cheese. A time of awareness where we intuited that what was happening 'outside' was also happening 'inside' each of us. A time when nature was our teacher. The following practices invite you to return and rekindle this inner knowing for the sake of your own well-being, for the sake of our planet and for future generations to come who will inhabit it.</div><div><br></div><div><strong>Principles of Mindfulness</strong></div><div><br></div><div><strong>Awareness </strong>- Paying attention to our attention - how and what we notice</div><div><div><strong>Non-judgement </strong>- Our ability to accept experiences as they are without</div><div>evaluation or judgment</div><div><strong>Peacefulness</strong> - Our ability to cultivate a state of peacefulness and equanimity</div><div>amidst changing conditions</div><div><br></div><div>Pay attention to these principles as you go through each exercise, bringing with you a sense of wakefulness, appreciation, and wonder to each experience.</div></div><div><br></div><div><strong>27. Peace with Change</strong></div><div><strong><br></strong></div><div>Look at how nature operates through the lens of change. We humans have a hard time with change and yet change is all there is.
