    <div class="html-content"><h6>An Invitation to Return...</h6><div><br></div><div>There was a time in human history when each of us was alive and awake to both the beauty and the wisdom of the natural world. A time of awareness where we intuited that what was happening 'outside' was also happening 'inside' each of us. A time when nature was our teacher. The following practices invite you to return and rekindle this inner knowing for the sake of your own well-being, for the sake of our planet and for future generations to come who will inhabit it.</div><div><br></div><div><strong>Principles of Mindfulness</strong></div><div><br></div><div><strong>Awareness </strong>- Paying attention to our attention - how and what we notice</div><div><div><strong>Non-judgement </strong>- Our ability to accept experiences as they are without</div><div>evaluation or judgment</div><div><strong>Peacefulness</strong> - Our ability to cultivate a state of peacefulness and equanimity</div><div>amidst changing conditions</div><div><br></div><div>Pay attention to these principles as you go through each exercise, bringing with you a sense of wakefulness, appreciation, and wonder to each experience.</div></div><div><br></div><div><strong>19. Earth Teach Me Meditation </strong></div><div><strong><br></strong></div><div><div><div><div><div>Before heading out for a nature exploration, first spend some time setting your intention. Begin by taking some long deep breaths, in through the nose and out through the nose, feeling your belly expand on the inhalation and contract on the exhalation. Allow your breath to resume to normal.</div><div>Instead of using your breath as an anchor for attention, this time, you will use a question. Turn inward and silently ask yourself: "What do I need to know most now, in my life?" Allow what arises to arise (e.g., flexibility, understanding, service, connection, etc.) without censorship. Continue to ask the question for the next five minutes, paying attention to any themes that emerge. At the end of your sit, identify a theme that you would like to explore on your walk. As you venture out, hold this intention present, and let nature be your guide. "Earth teach me __________."   <Title>UMBC Eats Community Cookbook Recipe of the Week</Title>

    <div class="html-content"><h5>Val's Crabcakes </h5><div><br></div><div><div>Ingredients:</div><div><div>16 ounces jumbo lump Maryland crab meat</div><div>Old Bay seasoning to taste</div><div>1 egg</div><div>Mustard to taste</div><div>6-8 unsalted Tops crackers (ground fine)</div><div>1/4 cup mayonnaise</div></div></div><div><br></div><div><div>Preheat a broiler. Mix the mayonnaise, mustard and egg in a bowl. Add the remaining dry ingredients along with the crab to the bowl.     <Title>UMBC Eats Community Cookbook Recipe of the Week</Title>

          <div class="html-content"><h5>Golabki</h5><div><br></div><div><div>Ingredients:</div><div><div>1 whole head cabbage</div><div>1 large onion, chopped</div><div>2 tbsp. butter</div><div>1 lb. ground beef</div><div>½ lb. ground pork</div><div>1½ cups rice, cooked</div><div>1 tsp. garlic, finely chopped</div><div>1 tsp. salt</div><div>¼ tsp. black pepper</div><div>1-2 cups beef stock</div></div></div><div><br></div><div>Tomato Sauce: </div><div><div>1 cup tomato sauce</div><div>½ of onion, chopped</div><div>1 tbsp. butter (or olive oil)</div><div>2-3 tbsp. heavy cream</div><div>Freshly ground pepper and salt</div></div><div><br></div><div>Mushroom Sauce: </div><div><div>1 lb. white mushrooms</div><div>1 onion, chopped</div><div>2 tbsp. butter or olive oil</div><div>1 cup beef broth</div><div>1 tsp. white flour</div><div>2 tbsp. heavy cream</div><div>2 tbsp. fresh Italian parsley, chopped </div></div><div><br></div><div><div>Remove core from cabbage. Place whole head in a large pot filled with boiling salted water. Cover and cook 3 minutes until softened enough to pull off individual leaves. You will need 18 leaves. When leaves are cool enough to handle, use a paring knife to cut away the thick center stem from each leaf, without cutting all the way through. Chop remaining cabbage and place in the bottom of a lidded casserole dish or Dutch oven.</div></div><div><br></div><div><div>Sauté the chopped onion in butter in a large skillet until tender, and let it cool.</div><div>Mix cooled onions with beef, pork, rice, garlic, salt, and black pepper until well</div><div>combined. Don't over-mix or the meat will become tough. Place about ½ cup</div><div>of meat on each cabbage leaf Flip the right side of the leaf to the middle, then flip the left side. Roll away from you to encase the meat and make a neat little roll. The bottom of the leaf and you will have something that looks like an envelope.</div></div><div><br></div><div><div>Heat oven to 350 F. Place the cabbage rolls on top of the chopped cabbage in the casserole dish or Dutch oven, seasoning each layer with salt and pepper. Pour beef stock over rolls, cover, and place in heated oven. Bake for 1 hour or until cabbage is tender and meat is cooked. Serve with pan juices or with one of the following sauces.</div></div><div><br></div><div>Tomato Sauce: </div><div><div>Sauté the chopped onion in butter in a large skillet until tender. Add</div><div>tomato sauce, slow cook for about 1 to 2 min. Add pepper and salt to taste. Remove from heat, add heavy cream.
