Each week, we curate talks on topics that matter NOW for all of us related to resilience, self-care, dealing with uncertain times, as well as ways to stay connected, inspired, and grounded when the earth beneath us is shifting.<div><br><p>Today's talk is <a href="https://www.ted.com/talks/verna_myers_how_to_overcome_our_biases_walk_boldly_toward_them" rel="nofollow external" class="bo">How to overcome our biases? Walk boldly toward them</a> by Verna Myers. <span>Our biases can be dangerous, even deadly — as we've seen in the cases of Michael Brown in Ferguson, Missouri, and Eric Garner, in Staten Island, New York. Diversity advocate Vernā Myers looks closely at some of the subconscious attitudes we hold toward out-groups. She makes a plea to all people: Acknowledge your biases. Then move toward, not away from, the groups that make you uncomfortable. A time of awareness where we intuited that what was happening 'outside' was also happening 'inside' each of us. A time when nature was our teacher. The following practices invite you to return and rekindle this inner knowing for the sake of your own well-being, for the sake of our planet and for future generations to come who will inhabit it.</div><div><br></div><div><strong>Principles of Mindfulness</strong></div><div><br></div><div><strong>Awareness </strong>- Paying attention to our attention - how and what we notice</div><div><div><strong>Non-judgement </strong>- Our ability to accept experiences as they are without</div><div>evaluation or judgment</div><div><strong>Peacefulness</strong> - Our ability to cultivate a state of peacefulness and equanimity</div><div>amidst changing conditions</div><div><br></div><div>Pay attention to these principles as you go through each exercise, bringing with you a sense of wakefulness, appreciation, and wonder to each experience.</div></div><div><br></div><div><strong>9. Italian seasoning</div><div>¼ tsp. garlic powder</div><div>4 eggs</div><div>¼ cup shredded Parmesan cheese</div><div>2 cups spinach or similar green, sliced into thin strips</div><div>Salt and pepper to taste</div></div></div><div><br></div><div><div>Heat broth in a deep pan with herbs and garlic on medium heat until near boiling. While the broth is heating, slice the fresh spinach leaves and reserve. Scramble eggs in a container with a spout, then stir the Parmesan into the</div><div>scrambled eggs.   <Title>UMBC Eats Community Cookbook Recipe of the Week</Title>

    <div class="html-content"><h5>Turmeric Coconut Chicken Soup with Yogurt &amp; Herbs </h5><div><br></div><div><div>Ingredients:</div><div><div><strong>Crispy Chickpeas:</strong></div><div>1 (15 oz) can chickpeas, rinsed and drained</div><div>2 tbsp. olive oil</div><div>1 tsp. harissa powder</div><div>½ tsp. kosher salt</div><div>¼ tsp. granulated garlic</div><div>¼ tsp. ground cardamom<br></div></div></div><div><br></div><div><strong>Soup:</strong></div><div><div>Olive oil</div><div>1 onion, diced</div><div>Kosher salt</div><div>2 garlic cloves, minced</div><div>1 tsp minced ginger</div><div>1 lb. carrots, peeled and sliced to ⅛ inch slices</div><div>1½ tsp. ground turmeric</div><div>1 tsp. harissa powder</div><div>¼ tsp. ground cardamom</div><div>1 can full-fat coconut milk</div><div>1 quart chicken stock</div><div>1 lb. cooked, shredded chicken</div><div>2 tbsp. lime juice</div></div><div><br></div><div><div><strong>Toppings:</strong></div><div>Greek yogurt</div><div>Parsley leaves</div><div>Fresh dill leaves</div><div>Sliced green onions</div><div>Lime juice</div></div><div><br></div><div><div><strong>Crispy Chickpeas:</strong></div><div>Preheat the oven to 425°F. Spread the drained chickpeas out onto paper towels and pat completely dry. Toss the chickpeas in a small bowl with the olive oil and spices. Spread them out onto a sheet pan in one, even layer. Roast for 25 minutes until crispy. Let cool before consolidating.</div></div><div><br></div><div><div><strong>Soup:</strong></div><div>Heat a large, heavy-bottom pot (or Dutch oven) over medium heat. Add enough olive oil to coat the bottom of the pot. Once the oil is hot, add the onions and a good pinch of salt. Sauté for about 6 minutes, stirring often, or until tender and slightly caramelized. Stir in the garlic and ginger. Cook for another minute. Add the carrots. Cook for 2-3 minutes. Lastly, stir in the</div><div>turmeric, harissa powder, and cardamom. Pour in coconut milk and chicken stock. Whisk until smooth. Bring liquid to a simmer over medium heat. Reduce the heat to medium-low and let the soup simmer for about 15 minutes, stirring often. Stir in the shredded chicken. Lastly, stir in the lime juice. Season with more salt as needed.
